Self-love can take many forms, from quiet moments of mindfulness to prioritizing our health. By choosing foods that nourish the body and uplift the spirit, we lay the foundation for physical and emotional well-being.

What better way to celebrate this season of love than with mindful, delicious meals? Below, you’ll find two vibrant and heart-healthy recipes. These easy-to-make dishes will energize your body, delight your taste buds, and remind you to cherish and care for yourself every day.

Bowl of vibrant beet hummus with parsley garnish, surrounded by cucumber slices and sesame crackers on a wooden board. Cozy kitchen vibe.

Recipe 1: Heart-Healthy Beet Hummus

Packed with antioxidants, fiber, and nutrients, this bright and beautiful beet hummus is not only good for your heart but also a feast for the eyes. It’s the perfect dip to enjoy with veggies, crackers, or as a spread on your favorite sandwich or wrap.

Ingredients:

  • 1 medium beet (roasted)

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 2 tablespoons tahini

  • 1 clove garlic

  • 1 tablespoon lemon juice

  • 1 teaspoon cumin

  • Salt to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Wrap the beet in foil and roast for 45-60 minutes, or until tender. Once cooled, peel and cut into chunks.

  2. Add the roasted beet, chickpeas, tahini, garlic, lemon juice, cumin, and salt to a food processor.

  3. Blend until smooth, scraping down the sides as needed. If the mixture is too thick, add a splash of water or olive oil to reach your desired consistency.

  4. Transfer to a bowl and garnish with a drizzle of olive oil, sesame seeds, or fresh herbs.

Serving Tip: Pair this hummus with carrot sticks, cucumber slices, or whole-grain crackers for a satisfying and heart-healthy snack.

Pink smoothie in a clear glass topped with chia seeds and a strawberry. Surrounded by bananas, strawberries, almonds, and peanut butter.

Recipe 2: Love Boost Smoothie

Start your day with this energizing and heart-opening smoothie. Loaded with strawberries, maca powder, and almond butter, it’s a delightful way to give your body a nourishing boost while indulging your taste buds.

Ingredients:

  • 1 cup almond milk (or your preferred plant-based milk)

  • 1 banana (fresh or frozen)

  • 1 cup strawberries (fresh or frozen)

  • 1 teaspoon maca powder (optional, for an extra energy boost)

  • 1 tablespoon almond butter

  • 1 teaspoon honey (or maple syrup for a vegan option)

Instructions:

  1. Combine all ingredients in a blender.

  2. Blend until smooth, adjusting the consistency with a splash of almond milk if needed.

  3. Pour into a glass, garnish with a strawberry slice or a sprinkle of chia seeds, and enjoy immediately.

Pro Tip: For an even creamier texture, freeze the banana and strawberries before blending. This also makes the smoothie extra refreshing!
